Smoked Chicken Salad

Ingredients

½ medium smoked chicken

1/2 melon 

4 cups finely shredded chard

1/2 cup fresh cream

1/2 cup mayonnaise

2 soupspoons Dijon mustard

1/2 cup extra virgin olive oil

20 finely chopped mint leaves

salt

ground pepper

mint for decorating

 

Preparation

1. Bone the chicken and dispose of the bones and offcuts. Shred and set to one side;

2. Cut the melon in half and throw away the seeds. Make melon balls with a melon scoop and mix with the chicken and chard. Set aside;

3. Place the cream and mayonnaise in a bowl. Whisk by hand for 1 minute. While still whisking add the mustard and olive oil. Keep whisking until it becomes an emulsion;

4. Season with mint, salt and pepper. Serve with the salad and decorate with mint leaves.
