Penne with Melon and Parma Ham

Ingredients

1 soupspoon extra virgin olive oil

2 cups penne

2 cups diced melon

1 soupspoon lime juice

4 peeled and sieved tomatoes

1 cup fresh cream

salt

freshly ground pepper

4 slices of Parma ham

 

Preparation

1. While the sauce is being prepared cook the penne in boiling salted water. Set aside;

2. In a frying pan lightly fry the melon in the olive oil;

3. Add the cream, lime juice, tomato paste, salt and pepper;

4. Leave for  a few seconds and add the pasta until it is well covered in the sauce;

5. Add Parma ham slices when on the plate.
