


Scottish Melons
Ingredients
300 grams pork sausage, (just the meat)
2 teaspoons Worcestershire sauce
1 soupspoon chopped onion
1 soupspoon chopped parsley
4 2x2 cm. melon cubes
1 soupspoon flour
1/8 teaspoon salt
1/8 teaspoon ground pepper
1 egg, whisked
2/3 cup breadcrumbs
oil for frying
Preparation
1. In a medium dish mix the sausage meat (without the skin), the Worcestershire sauce, onion and parsley. Add the flour, salt and pepper. Mix altogether;
2. Divide the seasoned sausage into 4 equal parts. Mold each part around the melon cubes with the hands;
3. Place the whisked egg into one dish and the breadcrumbs in another;
4. Then place the melon and sausage patties in the whisked egg and then the breadcrumbs. The melons/sausage patties must be well coated, with breadcrumbs, but not excessively so;
5. Heat the oil in a pan or electric frying pan to 180 ºC. Carefully place the melon and sausage patties into the hot fat and fry for 5 minutes, or until they are golden brown.
