Frozen Melon

Ingredients

2 cups Cantaloupe melon, cut into small pieces

5 teaspoons plain, colorless gelatin powder

1/2 cup fat-free yoghurt

2 teaspoons powdered sweetener

Preparation

1.     Place the melon in the freezer;

2.     In an oven-proof bowl, soak the gelatin in 5 soupspoons of water. Dissolve in a bain-marie and add the fat-free yoghurt;

3.     Leave in the refrigerator for 1 hour, or until it has the consistency of an egg white;

4.     Transfer it to the bowl of the food mixer and mix for around 10 minutes. Without stopping mixing, add the melon and sweetener;

5.     Mix for a further 5 minutes. Leave it in the freezer for around 3 hours or until it becomes firm;

6.     Using the melon scoop make small balls with the rest of the melon. Serve frozen in glasses and decorate with a melon skewer.
