Fish Fillet in a Melon Cream
Ingredients
2 fish fillets (250g approximately)
4 soupspoons olive oil
1 melon
1 lime
1 soupspoon chopped parsley
1 soupspoon butter
1 glass white wine
100 grams fresh cream
ground white pepper
salt
Preparation
1. Season the fish fillets with salt and white pepper, fry them in the olive oil and set aside;
2. Cut the melon in half and make lemon balls, using a melon scoop;
3. Place the rest of the melon in a blender and beat with lemon juice. Strain through a sieve;
4. Melt the butter in a saucepan, add the beaten mixture and allow to boil. Add the white wine and allow to evaporate. Add the fresh cream and allow it to thicken;
5. Add lime peel zest and the melon balls. Place the fish fillets on a plate, serve with the sauce and sprinkle parsley over the top.
