


Apricot and Melon Chutney
Ingredients
200 grams dried apricots
2 cups chopped melon
1 coffee spoon chopped Calabrian sausage
1 coffee spoon powdered clove
1 coffee spoon ground nutmeg
1 coffee spoon mustard grains
1 teaspoon powdered ginger
1/2 teaspoon dried garlic
2 soupspoons dried onion
1 cup apple vinegar
2 soupspoons Demerara sugar
salt to taste
1/2 cup orange juice
1 teaspoon corn starch
1 coffee spoon orange peel zest
Preparation
1. Soak the chopped apricots in water. Then place them in a saucepan with all the other ingredients, except the starch;
2. Place on the heat and when it begins to boil lower the heat and if it is very thick add a little water, Cooking time is around 40 minutes;
3. When it is almost ready, add the starch that has been dissolved in a little water and mix, allowing it to thicken slightly.
