Melon Mousse

Ingredients

3 cups diced melon

1 sachet plain powdered gelatin (12g)

1/4 cup water

1 ½ cups natural yoghurt

1 ½ cups sugar

3 beaten egg whites

 

Preparation

1. Beat the melon cubes into a consistent puree. Set aside;

2. In a medium saucepan mix the gelatin and water and allow to stand for 5 minutes;

3. Place on a low heat and cook, stirring well until it dissolves. Remove from the heat;

4. Add the yoghurt, the melon and sugar and mix well;

5. Pour into a bowl and place in a large container with water and ice cubes, always mixing it until it begins to stiffen;

6. Add the whisked egg whites and gently mix;

7. Pour the mousse into individual molds and serve chilled.
