Cantaloupe Melon Salad Inside Lobster

Ingredients

200 g cubes of melon

4 unit chard leaves without stem

2 unit big lobster tails

1 unit chopped onion

1 unit chopped chard stem

½ glass white wine

grains of black pepper

 

Sauce

1 tbsp chopped capers

1 tbsp chopped cornichons

1/2 cup mayonnaise

½ cup fresh whipped milk

2 tbsp mustard

50 ml olive oil

spring onion

salt

white pepper

 

Preparation

1. Simmer the lobster with the onion, the chard, the pepper grains and the wine;

2. When cooked, take the meat off the carcasses and cut it into cubes;

3. Cut the chard leaves into thin strips;

4. In a plastic bowl, mix the mayonnaise, the whipped milk, the capers, the cornichons and the mustard;

5. Mix everything very well and season it with salt and black pepper;

6. Add the melon and the lobster. Add the mayonnaise sauce and mix well;

7. Line lobster carcasses with the chard leaves. Drizzle it with olive oil and cover with the lobster and the melon mixture. Garnish it with the spring onion.
