Mediterranean Risotto

Ingredients

2 cups Arborio rice

1 chopped onion

2 cups diced yellow melon

1/2 cup dry white wine

2L vegetable broth

50g raw ham

200g clean shrimp

4 tablespoon butter

2 tablespoon grated parmesan cheese

Salt

Black pepper

Preparation

1.     Put the vegetable broth in a pan and take it over high heat. As soon as it boils, lower the heat and reserve it;

2.     Meanwhile, put half of the butter in another pan and take it over low heat;

3.     As soon as it melts, add the onion and mix it well until it gets transparent;

4.     Add the rice and mix it for 2 minutes over high heat;

5.     Add the wine and mix it well until it has evaporated;

6.     Add a soup scoop of the vegetable broth at once, keep mixing it;

7.     Before finalizing the cooking, add the ham cut into thin strips and the shrimp, seasoned with salt and pepper;

8.     At last, add the melon, the rest of the butter and the grated cheese.
